Harvest 2007  
Whole Chardonnay Clusters – This was our first year to start producing Chardonnay. We opted to do full cluster pressing instead of crushing the fruit first.

Free Run – The Chardonnay juice was allowed to run from the press under a very long and low pressing pressure cycle.

   
Cold Stabilization – After pressing, we transferred the juice to stainless steel tanks where we cold stabilized it with dry ice before adding the yeast and starting the fermentation process. Nancy has taken over our white wine program and will be our Chardonnay Winemaker from this point on. Bandit – Our winery cat is on the lookout for uninvited guests.
   
Turkey –  This uninvited friend must have smelled the fruit and came around for a free meal . Zin Port – Our second harvest for our Zin Port to be released in three years. The fruit came in ripe and was punched-down three times per day.
